Hello November

It's hard to believe that it is November already! I feel like it was just yesterday when I was welcoming Justin home and now October is gone too. Last weekend we went to an '80s themed Halloween party. 

My hubby's costume was totally rad: a mullet, glasses, and a laser background! The background was inspired from Pinterest. I took a laser background that I found online and made a poster at Walgreens. We glued it to a box and connected a backpack so he could wear it. We configured the straps of the backpack to go through the back of his sweater so you wouldn't see the straps. 

We dressed Iivana up as a ladybug this year on Halloween. She wasn't a fan of the little hood with the heart antennae, but she did look adorable! (Remember last year, she was Minnie Mouse!)

She enjoyed a new rope toy that was sent from her Grannie and Uelo too. 

Whenever I think of Halloween, I think of beef stew. My mom would make it every Halloween! It was a tradition that I wanted to share with Justin this year so I called my mom up for the recipe. I made it the night before and Justin came home at lunch to put it in the oven so it would be ready for dinner.

It was actually a pretty easy recipe to make too; it just takes 5 hours to cook so you have to plan accordingly. Below, I'll share the recipe. It's my grandma's recipe and makes me think of my childhood. I made one minor adjustment to make it gluten free!

Beef Stew:

  • 2 lbs. of meat (I used precut stew meat. But my mom says she has also used round steak or even sirloin.) 
  • 4-5 potatoes (I like to use a crinkle cutter and cut them into about 1 in. chunks.)
  • 6 large carrots (I used baby carrots and cut them in half. I used about half a 1 lb. bag.)
  • 1 big white onion (cut into rings)
  • 1 small can of peas (I ended up using about half a bag of frozen peas.)
  • 1 tsp. sugar
  • slice of bread cut into small pieces (I used the ends of 2 slices of Udi's bread that I had in my freezer. I cut them into small pieces and it worked great.)
  • 1/2 tbsp. of salt
  • pepper to taste
  • 4 tbsp. of tapioca (sprinkle in)
  • 46 oz. can of V-8 (use about 2/3 or until all the stew is covered)
Mix all the ingredients together and bake at 250 degrees for 5 hours.

Labor Day - Three Day Weekend

I love three day weekends, even if I spent most of my time cleaning and working on school stuff. It seems like in both said categories, despite how much you do and get done there is always more that could be done. You can clearly see what a good helper Iivana was too. I rolled up the rug to move it and she thought I created a nice bed for her.

Thankfully, I didn't spend my whole weekend working on my to do list. I enjoyed Spartan football Friday night and had the TV on college football all day Saturday. Yesterday, I went shopping for a little after getting my car cleaned and detailed! It looks brand new. I didn't feel like cooking so I decided to order take away at P.F. Chang's while I was out. I had received an email with a 20 percent off coupon code for the weekend, so I thought I'd give it another try. (I didn't like the Singapore Noodles last time.) This trip I ordered GF Chang's Spicy Chicken.

The verdict: I still wasn't impressed. No veggies, only chicken! It did come with some brown rice on the side. Plus, even with 20% it still cost 12.75! It wasn't bad tasting, in fact I liked the flavor but I just felt like it wasn't amazing. I wasn't blown away. But don't get me wrong, I love the effort that P.F. Chang's makes to accommodate gluten free diners. I know some people who absolutely love P.F. Chang's. When comparing P.F. Chang's and Pei Wei, I think I will always prefer Pei Wei.

Finishing First Week & Football Foods

A successful first week of school is finished! However, I am utterly exhausted. I always forget how much walking and talking I do that my body isn't used to (from being lazy all summer). The week was spent learning the rules and establishing classroom procedures. My students really enjoyed this Post-It note activity that I came across on Pinterest

The week ended with the start of college football for my MSU Spartans! Check out Iivana's fabulous new jersey.

Despite being tired from the work week (and looking that way too), Iivana and I were ecstatic about the game and Sparty's win. It wasn't the prettiest, but I'll take it.

This photo cracks me up! Iivana is crazy. I was trying to take a picture with her...but she wanted to show you her pearly whites.

I tried to continue the tradition that Justin and I started by making football appetizers for the game. (Check out some of the finger foods we made last year: here, here, and here.) I decided to make a pizza inspired appetizer. Remember I bought some pizza crust mix at Marshall's? My random mixture that didn't follow the box recipe, didn't turn out the way I had hoped. It was still edible, but not great.

My experimented creation wasn't worthy enough to share all the details. But these gluten free pizza puffs are a much better recipe to share. I've made them before and they are soft and delicious!

First Day Jitters

Today was the first day of school with my new fourth graders. So far, I have 25 students with 15 of them being boys! My friend at work showed me a picture of her son today on the first day of his senior year. She was joking about taking a picture of him, and then I admitted that I still take a yearly photo on the first day. My mom always took pictures of us growing up and I've continued the tradition as a teacher. Here was last year's photo! This was the best I could do with my self-timer, since Justin is still deployed.

While I was pretty excited for my first day, Iivana on the other had was not. She knows when I'm off to work and she will be in her room. Just look at that face. She knows the way to her mommy's heart, and sometimes I wish I could still stay home with her! (Remember, I'm a crazy dog lady now.)

I was also going to tell you about this sweet wreath I made for my classroom, but I am exhausted! I talked more than I'm used to today and according to my pedometer I walked twice as much as what I have been lately. Hopefully tomorrow night I have a little more energy, so I can show you how I made this!

So So Salad

First things first, happy 3rd birthday to my baby girl, Iivana. I had intended to make her homemade treats, but I was lazy and bought her a bone instead. I did fill up her pool from last year for her to play today. However, she wasn't too interested in her pool.

I love this picture that I took of her last week. She was out of food, so I went to the commissary to buy her some dog food and they had 2 dollar off coupons. Then I noticed that it was only 11.99 for a huge bag. We normally pay close to forty dollars a bag for her Nutro Dog food! I bought all they had stocked because it was such an awesome deal.

For dinner tonight I made a watermelon and goat cheese salad. It had a citrus vinaigrette that you make from 3 tablespoons of EVOO, 3 tablespoons of orange juice, 1 tablespoon of red wine vinegar, salt and pepper.

I used mixed salad greens for the base. Although I wish I had chosen more of an arugula and spinach blend that had a little more flavor than romaine. I topped the salad with watermelon chunks, red onion, and goat cheese. Then I poured some of the vinaigrette.

I had some left over steak that I cut up and topped the salad off with. Overall the salad was okay; I think I had built it up more in my head. I think I would do with out the lettuce and try a different dressing next time. It wasn't horrible, but not something I will probably make again the same way. I'd be happy just eating watermelon and goat cheese. Maybe some basil and a balsamic vinaigrette would be better. But this was an easy and filling summer salad to make.

Colorful Pup

Remember when I went to Painting with a Twist? I had a blast there and definitely want to go again, but I can see how it can get a little pricey to go often. After my first experience at PWAT, I felt more confident in my painting abilities. They walk you through the painting process, so anyone can paint! 

While looking at the calendar for future classes, I came across this neat dog painting. I thought the color scheme would go perfect in my kitchen with these food pictures and colored mats. But I wanted my painting to be of my sweetheart, Iivana. So I decided to take on the task at home!

I already had some blank canvases at home from my melting art project when we bought a value pack. However, I did have to invest in some brushes and acrylic paint. I bought 3 brushes from Michael's that were on sale for 3 dollars each. I bought a small, medium, and a larger sized one. I also bought this starter pack of paint for 9.99, which I used a 40% coupon on so it was even less. Since I'm a teacher, I also got 15% for an educator discount. So I maybe spent 15 bucks on this project. I will eventually buy more colors and alternate brush sizes, but I wanted to make sure that I could paint at home first.

I used my computer as a guide and pulled up the PWAT picture and a picture of Iivana that I took during a personal photo shoot of my doggie. I sketched an outline of her. This was probably the most difficult part, because it was the structure of the painting. 

It's light but you can see my sketch.

Then I painted solid color bases.

I guess I got carried away and didn't take pictures of my other in between steps. I mixed colors, painted layers, let them dry, then added more color. The good thing is that if you mess up, you can let it dry and paint over it. I worked on it for a couple hours one day. I left it like this and then finished it up the next day.

My finished product! What do you think? Does it look like Iivana? The eyes were really difficult for me to mimic. I also think the face on this painting is a little longer than hers, but I like it!

Summary of Michigan Trip

I need to wrap up my Michigan vacation posts since tomorrow is my actual last day of summer vacation. I officially go back to work on Wednesday to start another year of teaching fourth grade! Plus, I've been working on some fun DIY projects I want to share. So this post sums up some memorable things I did (& that I have pictures of) while in Michigan last month.

I was fortunate that my sister, Jill and her husband allowed Iivana and me to come stay with them for a few days. While they were at work my parents and I took the kids to Potter Park Zoo one day. These two pictures crack me up! Maren is petting the goats and my dad is with Maren in the kangaroo cut out.

After our zoo visit, we stopped by the MSU Diary Store.

We enjoyed some ice cream.

We went out to eat for Jill's birthday at Ruby Tuesday.

They had a gluten free menu, but it was a chain restaurant. If I'm at a chain, I usually try to pick something that doesn't require a lot of modifications. I'm not sure how knowledgeable the kitchen staff is about gluten free and cross contamination. So I kept it simple with the petite sirloin, a baked potato, and broccoli.

 I was able to attend my sister's annual 4th of July party with my baby, Iivana.

I think I pretty much scarred her for life of being terrified of fireworks. For some reason, I didn't think the noise would scare her because she hears loud planes all the time. But we retreated to the van for safety during their show.

But I still got a glimpse of some of the fireworks.

My niece, Maren was still going strong that night. She was a doll and put on her mama's shoes; she was so proud of herself.

I met up with some friends for drinks.

I tried some new gluten free beer that I don't have access to in Texas. (Thanks to my sister, Kristen for hooking me up!) Here I was drinking Dogfish Head's Tweason'ale beer. I thought it was a wonderfully refreshing summer drink. The strawberries and honey give the beer a fruity flavor that isn't as sweet as cider. I hope they start selling this in Texas soon.

Traveling

On this particular journey back to Michigan, we drove. Iivana came with me and it would be too hot during the summer for her to fly. My parents graciously picked me up and brought me back. I got back here Wednesday night. From Texas to Michigan, it is close to 25 hours of driving. With all the car time, eating gluten free while traveling can often be difficult. One thing we did that helped was pack meats, cheese, and fruit in a cooler. We'd stop at rest stops and take a break to have a little picnic. It always takes a little time to get all that food ready, but it is totally worth it because you know your food is safe to eat.

But for people who are in a pinch or didn't plan very well, I always recommend Wendy's. There are options besides just salads! Plus, they have a nice, helpful gluten free guide too. I always get their chili and a frosty.

If I'm feeling extra hungry, I order a baked potato with sour cream and chives.

Their chili is so filling and tasty. I even find it scrumptious on sizzling summer days; as long as you eat it in air conditioning.



I have many more updates to come about my trip. But this post seemed like a perfect transition post, now that I'm back in Texas.

Fruitiversary

Today marks four years of marriage for Justin and me! And today poured with rain, just like on our wedding day. Unfortunately, we are roughly 7,000 miles apart right now (as long as I did the math correct). But I am blessed to have a loving, thoughtful husband who sent me an Edible Arrangement with balloons.

My husband did some research, because the fourth anniversary is the fruit anniversary or "fruitiversary." I don't know if Justin came up with that word or if he found it somewhere, but I think it is clever. See even the arrangement has a "4" made of pineapple!

Plus, I love fruit!

I especially adore the strawberries and pineapple dipped in chocolate. The chocolate is gluten free, however it could be manufactured in a facility with gluten.

Iivana thought it was her gift. She was sniffing and smelling; I had to fend her off and explain that it was mommy's gift. I did share a strawberry with her though.

He even sent balloons; I just now realize why there are four, duh! Justin is way better at significance things than me. (Remember, I sent him $11 for his birthday.) Although for our third anniversary, I bought something leather for us.

The best part of the day was Skype-ing with him! I love you Justin, and you will be home soon. I can't wait to hug and kiss you.
