If you're wondering how Iivana is doing, this is a glimpse into her life lately. She usually has to stay in this marked area, where you see various forms of entertainment: two Kong's, two tough toys, a bone, a Frisbee ring, and an old t-shirt to chew. Her movement is still limited so no walks, playing, or running.
Her new stitches look so good. I'm glad that my baby is finally healing.
Now on to a fairly simple healthy dinner. No, these are not burgers...they are grilled portabella mushrooms. All we did was coat them with some olive oil and spread some fresh garlic on the outside. Then they grilled for about 10 minutes on a stove top grill.
I don't even remember where we got this recipe from in the first place. Now when we make it, we don't really measure anything. To serve on top of the portabella, we make a little salad mixture. It consists of fresh mozzarella, diced red onion, chopped tomato, basil, garlic, and olive oil. The original recipe calls for fresh basil, but we often use the dried basil and it works just as well. We also add a little sea salt to taste.
This dinner is healthy and filling. The vegetables compliment the rich meaty flavor of the portabella.
One recommendation: don't make the salad mixture until the day of. It doesn't taste good the next day because the red onion flavor attacks everything else, especially the fresh moz when it has the opportunity to marinate over night.
