The weekend flew by and again we spent most our time hanging out with Iivana. Saturday was an unproductive day. Today felt more constructive, being that we were home from the grocery store before noon. I also cleaned the atrocious kitchen and wrote some lesson plans for the week.
Iivana is of course restless; she longingly looks out the window wishing she could be outside running and jumping.
For dinner, we decided to make some chicken kabobs on the grill. I prepped the veggies, soaked the skewers, and added a twist by also cubing some fresh mozzarella.
Justin marinated the chicken in honey mustard sauce. Then together we varied the chicken, veggies, and cheese on the skewers.
The cheese wasn't the best idea, because most of it melted off into the grill. A few pieces melted onto some of the veggies which was a nice surprise. The kabobs were moist and flavorful. I especially enjoyed the whole mushrooms
I was even inspired to bake tonight! I bought a new cookbook and tried the chocolate banana cupcake recipe. I'll let you know tomorrow how they turned out.
